Peanut Brittle

Difficulty: Medium

Notes:

  • Don’t scrape the edges of the pan. This can cause the sugar to crystalize.
  • Use a heavy pot and a single thermometer. Stirring in the nuts is rough work.
  • Do not leave out overnight. It can cause it to stick to the marble.
  • You can use your spatula to help spread the pour out. Move quickly!

Tools:

  • Marble Slab (buttered)
  • Forks (x2 per person, buttered)
  • Extra butter for rebuttering forks while pulling

Ingredients:

  • 3 cups Sugar
  • 1 3/4 cups Light Corn Syrup
  • 1 cup Water
  • 2-3 cups Peanuts (see notes)
  • 2 tbsp. Butter (room temp)
  • 1 tsp. Baking Soda

Prep:

  • Butter marble slab and prepare a small bowl with butter and forks for stretching.
  • Prepare butter and baking soda in a side container.

Directions:

  1. Combine sugar, corn syrup, and water in a heavy pan.
  2. Stir only until sugar is dissolved.
  3. Cook over high heat 275°.
  4. Mix in peanuts.
  5. Stir constantly and cook to 295°.
  6. Remove from heat.
  7. Stir in butter and baking soda.
  8. Pour onto buttered marble and quickly pull thin.
